The management and residents of Legacy Retirement Communities are proud to announce that all managers, chefs and cooks of the Legacy Dining Services team, led by Director Robert Darrah, were certified as Healthcare Chefs on November 4 after completing a comprehensive, intensive training program conducted by Don Miller & Associates.

The Healthcare Culinary Academy program focuses on enhancing culinary skills and optimizing nutrition with fresh, delicious cuisine. All aspects of culinary production are reviewed, skills assessed before the program starts, then progress is closely monitored during the process to insure that a high degree of excellence is reached and maintained. After a final practical skills assessment, all trainees are required to pass a comprehensive examination.

This diploma program, conducted under the auspices of the American Culinary Federation, is one of the few in the country to focus on this particular segment of the culinary industry.

As of this writing, Darrah and his team are the only Certified Healthcare Chefs in the Lincoln community. This achievement is one more feather in the cap of one of the most successful culinary operations in Lincoln.

During 2008 Director Darrah was recognized as Food Service Director of the Month by FSD Magazine, a monthly national journal that encompasses all aspects of foodservice from schools thru white tablecloth restaurants.

In 2009, Legacy’s Dining Services was awarded the “Gold Award of Excellence” at the “Good to Best” national culinary conference in recognition of their outstanding commitment to excellence in service, food quality, and creative cuisine.
